Ingredients
Scale
1 cup cottage cheese (full fat or low fat)
6 large eggs
1/4 cup milk (any kind)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar or Monterey Jack)
1/2 cup cooked bacon crumbles or diced ham
1/4 cup chopped spinach (optional)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a 12-cup standard muffin tin or silicone mold.
In a blender, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until completely smooth and creamy. This step creates the fluffy texture.
Stir in the shredded cheese, bacon, and spinach (if using) into the blended egg mixture.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 18 to 22 minutes, or until the egg bites are set and a toothpick inserted near the center comes out clean.
Let the egg bites cool in the muffin tin for 5 minutes before carefully removing them.
Serve warm or store them for later.
Notes
For a smoother texture, strain the cottage cheese mixture through a fine-mesh sieve before adding mix-ins.
If you prefer a keto version, omit any starchy vegetables and use only cheese and meat for mix-ins.
These egg bites store well in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave for 30 seconds.
