Make this Super Easy 30-Minute Creamy Chicken Taco Soup when you need a quick, comforting meal. You can cook this on the stovetop or easily adapt it for your slow cooker. It features rich, creamy flavor thanks to a touch of cream cheese.

Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts or thighs
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 4 cups chicken broth
  • 1 packet (1 ounce) taco seasoning mix
  • 4 ounces cream cheese, cubed
  • Optional Toppings: Shredded cheddar cheese, sour cream, avocado, cilantro

Instructions

  1. Place the chicken breasts, black beans, corn, Rotel, cream of chicken soup, chicken broth, and taco seasoning into a large pot or Dutch oven.
  2. Bring the mixture to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for 15 minutes, or until the chicken is cooked through.
  4. Remove the chicken and shred it using two forks. Return the shredded chicken to the pot.
  5. Add the cubed cream cheese. Stir constantly over low heat until the cream cheese is completely melted and the soup is creamy. Do not let it boil after adding the cream cheese.
  6. Taste and adjust seasoning if needed.
  7. Serve hot with your favorite toppings.
  8. For Slow Cooker Method: Combine all ingredients except the cream cheese in the slow cooker. Cook on Low for 6 hours or High for 3 hours. Shred the chicken. Stir in the cream cheese until smooth before serving.

Notes

  • For a thicker soup, mash about 1/4 cup of the beans against the side of the pot before adding the cream cheese.
  • You can use pre-cooked rotisserie chicken to reduce the cooking time further; just add it when you add the cream cheese.
  • Use low-sodium broth and beans to control the salt content.
