Ingredients
Scale
1 tablespoon butter
1/4 cup all-purpose flour
1 cup milk
1/2 cup beer (lager or pale ale recommended)
8 ounces sharp cheddar cheese, shredded
4 ounces Gruyere cheese, shredded
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
1/4 teaspoon garlic powder
Pinch of cayenne pepper
Instructions
Melt the butter in a medium saucepan over medium heat.
Whisk in the flour and cook for one minute, stirring constantly to create a roux.
Slowly whisk in the milk until the mixture is smooth. Cook, stirring often, until the sauce thickens enough to coat the back of a spoon, about 5 minutes.
Reduce the heat to low. Stir in the beer, Dijon mustard, Worcestershire sauce, garlic powder, and cayenne pepper. Mix well.
Gradually add the shredded cheddar and Gruyere cheeses, stirring until completely melted and smooth. Do not let the mixture boil after adding the cheese.
Remove from heat and serve warm immediately with pretzels or vegetables.
Notes
Use a beer that you enjoy drinking, as its flavor will concentrate in the dip.
Shred your own cheese from a block for the creamiest texture; pre-shredded cheese often contains anti-caking agents that affect melting.
If the dip becomes too thick while serving, stir in a tablespoon of warm milk or extra beer to reach your desired consistency.
