Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup whole berry cranberry sauce
  • 1/2 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove chicken and set aside.
  4. In the same skillet, whisk together the cranberry sauce, chicken broth, balsamic vinegar, and dried thyme.
  5. Bring the sauce to a simmer, stirring until smooth.
  6. Return the chicken to the skillet. Reduce heat to medium-low.
  7. Cover the skillet and let the chicken simmer for 12-15 minutes, or until fully cooked (internal temperature of 165°F).
  8. Uncover and cook for 2-3 more minutes to slightly thicken the sauce, spooning it over the chicken.
  9. Serve immediately.

Notes

  • We suggest serving this over rice or alongside roasted Brussels sprouts to balance the sweetness.
  • For a richer flavor, you can use chicken thighs instead of breasts. Adjust cooking time as needed.
  • If you prefer a thicker glaze, remove the chicken halfway through cooking and reduce the sauce over higher heat before returning the chicken.
