Ingredients
Scale
4 large eggs, separated
1/2 cup cottage cheese, full fat or low fat
1/4 teaspoon cream of tartar
1/8 teaspoon salt
Instructions
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
In a bowl, mix the egg yolks and cottage cheese until completely smooth. You can use an immersion blender for the smoothest texture.
In a separate, clean, dry bowl, beat the egg whites with the cream of tartar until stiff peaks form. This step adds the necessary airiness.
Gently fold one-third of the beaten egg whites into the yolk and cottage cheese mixture to lighten it.
Carefully fold in the remaining egg whites until just combined. Do not overmix; you want to keep the volume.
Spoon four equal mounds of the batter onto the prepared baking sheet. Gently shape them into rounds.
Bake for 25 to 30 minutes, or until the bread is golden brown and firm to the touch.
Remove from the oven and let cool slightly before serving.
Notes
For the lightest texture, ensure your egg white bowl is completely free of grease or yolk.
Using an immersion blender ensures the cottage cheese fully incorporates, preventing lumps in the final product.
This bread is best eaten the day it is made for optimal fluffiness.
