Ingredients
Scale
4 boneless, skinless chicken breasts, pounded to 1/2 inch thickness
1 cup all-purpose flour
2 large eggs, beaten
1 1/2 cups seasoned breadcrumbs
1/2 cup grated Parmesan cheese, plus more for topping
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and black pepper to taste
2 tablespoons olive oil
2 cups marinara sauce
1 cup shredded mozzarella cheese
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a baking sheet or line it with parchment paper.
Set up a standard breading station: place flour in one shallow dish, beaten eggs in a second, and mix breadcrumbs, 1/2 cup Parmesan cheese, oregano, garlic powder, salt, and pepper in a third.
Dredge each chicken cutlet first in the flour, shaking off excess. Dip it into the egg mixture, letting excess drip off. Finally, press the cutlet firmly into the breadcrumb mixture to coat both sides evenly.
Heat olive oil in a large skillet over medium heat. Sear the breaded chicken for 2 minutes per side until golden brown. This step adds crispness.
Transfer the seared chicken to the prepared baking sheet.
Spoon about 1/4 cup of marinara sauce over each cutlet. Top with mozzarella cheese and a sprinkle of extra Parmesan cheese.
Bake for 15 to 20 minutes, or until the chicken is cooked through (internal temperature reaches 165 degrees Fahrenheit) and the cheese is melted and bubbly.
Serve immediately, perhaps over pasta with extra sauce.
Notes
For extra crispy results, spray the tops of the breaded chicken lightly with cooking spray before baking.
You can substitute panko breadcrumbs for standard breadcrumbs for a crunchier texture.
Use your favorite store-bought or homemade marinara sauce.
