Make restaurant-quality Chicken Fried Rice right at home with this quick and easy recipe. You will achieve that perfect takeout flavor and fluffy rice texture using simple steps.

Ingredients

Scale
  • 2 cups cooked, cold day-old white rice
  • 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce (for marinating chicken)
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup frozen peas and carrots mix
  • 2 large eggs, lightly beaten
  • 2 tablespoons soy sauce (for seasoning)
  • 1 tablespoon oyster sauce (optional, for deeper flavor)
  • 1 teaspoon sesame oil
  • 2 green onions, sliced for garnish

Instructions

  1. Toss the cut chicken pieces with 2 tablespoons of soy sauce. Set aside.
  2. Heat a large skillet or wok over medium-high heat. Add half of the vegetable oil.
  3. Add the marinated chicken and cook until browned and fully cooked through. Remove the chicken and set it aside.
  4. Add the remaining vegetable oil to the skillet. Add the minced garlic and diced onion. Stir-fry for about 30 seconds until fragrant.
  5. Add the frozen peas and carrots mix. Stir-fry for 2-3 minutes until tender-crisp.
  6. Push the vegetables to one side of the skillet. Pour the beaten eggs onto the empty side. Scramble the eggs quickly until just set, then mix them with the vegetables.
  7. Add the cold rice to the skillet. Break up any clumps with your spatula. Stir-fry for 3-4 minutes to heat the rice through.
  8. Return the cooked chicken to the skillet.
  9. Drizzle the 2 tablespoons of soy sauce and oyster sauce (if using) over the rice mixture. Toss everything together quickly until the rice is evenly coated and heated through.
  10. Stir in the sesame oil.
  11. Serve immediately, garnished with sliced green onions.

Notes

  • Use cold, day-old rice for the best, non-mushy texture.
  • High heat is key for achieving that authentic ‘wok hei’ flavor.
  • Adjust soy sauce levels to control saltiness.
  • This recipe works well for meal prepping; store cooled rice separately before reheating.
