This Cheesy Loaded Meatloaf Casserole turns a classic into an easy, comforting, and satisfying weeknight meal. You get all the flavor of meatloaf baked right in a casserole dish, topped with melted cheese for extra richness. It minimizes cleanup and is perfect for family dinners.

Ingredients

Scale
  • 2 lbs ground beef (80/20 recommended)
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg, lightly beaten
  • 1/2 cup finely chopped onion
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded cheddar cheese (for topping)
  • 1/2 cup ketchup or preferred glaze topping (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, combine the breadcrumbs and milk. Let stand for 5 minutes to soften the breadcrumbs.
  3. Add the ground beef, egg, chopped onion, salt, pepper, garlic powder, and Worcestershire sauce to the breadcrumb mixture.
  4. Mix gently with your hands until everything is just combined. Do not overmix; this keeps the meatloaf tender.
  5. Press the meat mixture evenly into the prepared baking dish.
  6. If using a glaze, spread the ketchup evenly over the top of the meat mixture.
  7. Bake for 30 minutes.
  8. Remove the casserole from the oven and sprinkle the shredded cheddar cheese evenly over the top.
  9. Return to the oven and bake for another 10 to 15 minutes, or until the cheese is melted and bubbly and the internal temperature of the meat reaches 160°F (71°C).
  10. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • You can add 1 cup of shredded carrots or finely chopped bell peppers to the meat mixture for extra vegetables.
  • This casserole freezes well after baking; cool completely, slice into portions, and store in an airtight container.
  • For an even easier cleanup, line your baking dish with parchment paper before pressing in the meat.
