Make this easy mixed berry cobbler using fresh or frozen berries for a warm, comforting dessert. The biscuit topping bakes up tender and golden, perfect for serving with vanilla ice cream.

Ingredients

Scale
  • 6 cups mixed berries (fresh or frozen)
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 1 large egg, beaten (for brushing)
  • 1 tablespoon coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or similar baking dish.
  2. Prepare the berry filling: In a large bowl, gently combine the mixed berries, 3/4 cup sugar, cornstarch, lemon juice, and vanilla extract. Pour this mixture into your prepared baking dish.
  3. Prepare the biscuit topping: In a separate medium bowl, whisk together the flour, 2 tablespoons sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  5. Pour in the milk and stir just until a shaggy dough forms. Do not overmix.
  6. Drop spoonfuls of the biscuit dough evenly over the berry filling. You do not need to cover the entire surface; gaps are fine.
  7. Brush the tops of the biscuits lightly with the beaten egg and sprinkle with coarse sugar.
  8. Bake for 35 to 45 minutes, or until the topping is golden brown and the berry filling is bubbly.
  9. Let the cobbler cool on a wire rack for at least 15 minutes before serving warm with vanilla ice cream.

Notes

  • If you use frozen berries, do not thaw them first; use them straight from the freezer.
  • For a different flavor, substitute half the berries with sliced peaches or rhubarb.
  • This recipe works well as a quick fruit dessert when you need a last minute dessert idea.
