Make a rich, velvety pub-style beer cheese dip quickly using sharp cheddar. This recipe is perfect for game days, parties, and serving with pretzels or chips.

Ingredients

Scale
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1/2 cup beer (lager or pale ale recommended)
  • 1 cup milk (whole milk preferred)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Gouda cheese, shredded
  • 1/4 teaspoon garlic powder
  • Pinch of salt and black pepper

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Slowly whisk in the beer until smooth. Cook for 2 minutes, stirring often.
  4. Gradually whisk in the milk until the mixture thickens slightly.
  5. Reduce the heat to low. Add the shredded cheddar and Gouda cheeses one handful at a time, stirring until each addition is fully melted and smooth before adding more. Do not let the mixture boil.
  6. Stir in the garlic powder, salt, and pepper.
  7. Taste and adjust seasoning if needed. Serve warm immediately.

Notes

  • For a smoother dip, shred your own cheese instead of using pre-shredded varieties.
  • If you prefer a spicier dip, add a dash of hot sauce or a pinch of cayenne pepper with the salt and pepper.
  • Optional addition: Stir in 1/2 cup of cooked, crumbled bacon during the final step for extra flavor.
  • This dip pairs well with soft pretzels, tortilla chips, crackers, and sturdy vegetables.
