This is our perfectly planned, yet intuitively executed, classic Banana Cream Pie. We give you the blueprint for a rich vanilla custard, fresh banana layers, and a flaky crust, making this project a delicious success for your portfolio.

Ingredients

Scale
  • 1 (9 inch) Pie Crust (baked or no-bake option)
  • 1 cup Granulated Sugar
  • ¼ cup Cornstarch
  • ¼ teaspoon Salt
  • 3 large Egg Yolks, lightly beaten
  • 2 cups Whole Milk
  • 2 tablespoons Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 3 medium Ripe Bananas, sliced
  • Whipped Cream or Meringue for topping

Instructions

  1. Prepare your pie crust according to your chosen method (baked or no-bake). Let the crust cool completely if baked.
  2. In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  3. Gradually whisk in the milk until smooth.
  4. Cook the mixture over medium heat, stirring constantly, until it thickens significantly and comes to a boil. Let it boil for one minute, still stirring. Remove from heat.
  5. In a small bowl, temper the egg yolks by slowly whisking about half a cup of the hot milk mixture into the yolks.
  6. Pour the tempered yolk mixture back into the saucepan with the remaining hot milk mixture.
  7. Return the saucepan to medium heat. Cook, stirring constantly, for 1 to 2 minutes until the custard is thick. Do not let it boil again.
  8. Remove from heat. Stir in the butter and vanilla extract until the butter is fully melted and incorporated.
  9. Pour half of the hot custard into the cooled pie shell. Arrange half of the sliced bananas evenly over the custard layer.
  10. Pour the remaining custard over the bananas. Arrange the remaining banana slices on top.
  11. Press plastic wrap directly onto the surface of the filling to prevent a skin from forming. Chill for at least 4 hours, or until completely firm.
  12. Top with whipped cream or meringue before serving.

Notes

  • Using very ripe bananas provides the best flavor for this classic pie.
  • Tempering the egg yolks prevents them from scrambling when added to the hot liquid.
  • For a no-bake crust, use a Graham Cracker or Nilla Wafer crust recipe.
