Make quick, individual egg cups with Caprese flavors using only your microwave. This recipe takes less than five minutes from start to finish.

Ingredients

Scale
  • 2 large eggs
  • 1 tablespoon milk or water
  • 1/4 cup cherry tomatoes, halved
  • 2 tablespoons shredded mozzarella cheese
  • 1 teaspoon fresh basil, chopped
  • Pinch of salt
  • Pinch of black pepper

Instructions

  1. Lightly grease two standard-sized microwave-safe ramekins or a muffin tin designed for microwave use.
  2. In a small bowl, whisk the eggs and milk or water together. Add salt and pepper.
  3. Divide the halved cherry tomatoes evenly between the two prepared ramekins.
  4. Pour the egg mixture over the tomatoes in each ramekin, filling them about three-quarters full.
  5. Sprinkle the mozzarella cheese and chopped basil over the top of the eggs in each cup.
  6. Microwave on high for 60 to 90 seconds. Check for doneness; the eggs should be set but not rubbery. If needed, microwave in 15-second increments until cooked through.
  7. Carefully remove the cups from the microwave. Let them cool for one minute before serving directly from the ramekins or gently inverting onto a plate.

Notes

  • Use small silicone muffin liners inside a microwave-safe tray for easier removal if you do not have ramekins.
  • Cooking time varies based on microwave wattage; start with the lower time estimate.
  • For a richer flavor, use fresh mozzarella pearls instead of shredded cheese.
