Ingredients
Scale
1 (10 oz) can of Ro*Tel Diced Tomatoes and Green Chilies (undrained)
1 (15 oz) can of chili (no beans)
1 (16 oz) package of Velveeta cheese, cubed
Instructions
Combine the Ro*Tel, chili, and Velveeta cubes in a medium saucepan or the basin of your slow cooker.
If using the stovetop, heat over medium-low heat, stirring constantly until the cheese is completely melted and the dip is smooth. Do not boil.
If using a slow cooker, set it to low and cook for 1 to 2 hours, stirring occasionally until smooth.
Transfer the dip to a serving bowl if necessary and serve immediately with your favorite dippers.
Notes
For a creamier texture, you can substitute half of the Velveeta with cream cheese.
If you prefer a thinner dip, add a splash of milk while stirring over low heat.
This recipe works well using canned vegetarian chili if you need a meatless option.
For serving, tortilla chips, sturdy crackers, pretzel bites, or vegetable sticks are great choices.
