Make this simple, cheesy Dorito Casserole for a quick weeknight dinner. This layered chip casserole uses ground beef and a creamy sauce for a delicious, crunchy bake.

Ingredients

Scale
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 (10.5 ounce) can condensed cream of chicken soup
  • 1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
  • 1 teaspoon taco seasoning
  • 1 cup water
  • 2 cups shredded cheddar cheese, divided
  • 1 (9.25 ounce) bag Nacho Cheese Doritos, lightly crushed
  • 1 cup sour cream

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Cook the ground beef and onion in a large skillet over medium heat until the beef is browned. Drain off any excess grease.
  3. Stir the cream of chicken soup, Ro-Tel, taco seasoning, and water into the skillet with the beef mixture. Bring the mixture to a simmer.
  4. Remove the skillet from the heat. Stir in 1 cup of the shredded cheddar cheese until melted and combined.
  5. Spread half of the lightly crushed Doritos evenly over the bottom of the prepared baking dish.
  6. Pour the beef and cheese mixture over the layer of Doritos.
  7. Dollop the sour cream evenly over the meat mixture and gently spread it out.
  8. Top the sour cream layer with the remaining crushed Doritos.
  9. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top layer of chips.
  10. Bake for 20 to 25 minutes, or until the cheese is melted and bubbly and the edges are set.
  11. Let the casserole rest for 5 minutes before cutting and serving.

Notes

  • For a Cool Ranch Dorito Casserole variation, substitute Nacho Cheese Doritos with Cool Ranch Doritos.
  • To prevent the bottom layer of chips from getting too soggy, you can bake the bottom chip layer alone for 5 minutes before adding the meat mixture.
  • If you prefer a spicier dish, use the spicy version of Ro-Tel or add a dash of hot sauce to the meat mixture.
