Ingredients
Scale
1 pound ground beef
1 medium onion, chopped
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10 ounce) can Ro-Tel diced tomatoes and green chilies, undrained
1 teaspoon chili powder
1/2 teaspoon cumin
1 cup water
2 cups shredded cheddar cheese
1 (9.25 ounce) bag Nacho Cheese Doritos, lightly crushed
1/2 cup sour cream (for topping)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
Brown the ground beef and chopped onion in a large skillet over medium heat. Drain off any excess fat.
Stir the cream of mushroom soup, Ro-Tel, chili powder, cumin, and water into the skillet with the meat mixture. Bring the mixture to a simmer.
Remove the skillet from the heat. Stir in 1 1/2 cups of the shredded cheddar cheese until melted and combined.
Spread half of the lightly crushed Doritos in an even layer on the bottom of the prepared baking dish.
Pour the meat mixture evenly over the layer of chips.
Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the meat layer.
Top with the remaining half of the crushed Doritos.
Bake for 20 minutes, or until the casserole is bubbly.
Remove from the oven and let it cool for 5 minutes before topping with dollops of sour cream.
Notes
You can substitute Cool Ranch Doritos for a different flavor profile.
For a make-ahead option, assemble the casserole completely, cover it, and refrigerate for up to 24 hours. Add 10-15 minutes to the baking time if baking directly from the refrigerator.
Serve with shredded lettuce or sliced black olives for added freshness.
