A simple, fresh salad featuring cucumber and tomato with a light, low-carb vinaigrette. This recipe serves well as a healthy side dish.

Ingredients

Scale
  • 2 large cucumbers, peeled and sliced
  • 3 medium ripe tomatoes, cut into wedges
  • 1/2 small red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Wash and prepare all vegetables as directed. Place the sliced cucumbers, tomato wedges, and red onion slices into a large bowl.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper to make the dressing.
  3. Pour the dressing over the vegetables.
  4. Gently toss the salad until all vegetables are lightly coated.
  5. Stir in the chopped fresh parsley.
  6. Chill for at least 15 minutes before serving to allow the flavors to meld.

Notes

  • For a keto cucumber tomato salad, you can add 1/4 cup of crumbled feta cheese.
  • You can prepare the vegetables ahead of time and store them separately from the dressing for up to one day.
  • Use firm, ripe tomatoes for the best texture.
