Make this easy, hearty sausage tortellini soup in your slow cooker for a warm, satisfying meal.

Ingredients

Scale
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon black pepper
  • 1 (15 ounce) can tomato sauce
  • 1 (8 ounce) package cream cheese, cubed
  • 1 (19 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Place the Italian sausage, onion, carrots, celery, and garlic into the slow cooker.
  2. Pour the chicken broth over the ingredients. Stir in the diced tomatoes, Italian seasoning, basil, and pepper.
  3. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until vegetables are tender.
  4. Stir in the tomato sauce and cubed cream cheese until the cream cheese melts completely into the soup base.
  5. Increase the heat to high if necessary, and add the tortellini. Cook for another 15 to 20 minutes, or until the tortellini are cooked through.
  6. Stir in the heavy cream during the last 5 minutes of cooking, if using.
  7. Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

  • For a richer flavor, brown the sausage in a skillet before adding it to the slow cooker. Drain off any excess grease.
  • If you prefer a thicker soup, mix 2 tablespoons of cornstarch with 1/4 cup of cold water, then stir the slurry into the soup during the last 30 minutes of cooking.
  • Serve this soup with crusty bread for dipping.
