A recipe for the popular crispy rice salad featuring toasted rice, fresh herbs, and a bright ginger-sesame dressing. This salad holds its crunch well for meal preparation.

Ingredients

Scale
  • 2 cups cooked day-old jasmine rice
  • 1 tablespoon neutral oil (for toasting)
  • 1/2 cup shelled edamame, cooked
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 green onions, thinly sliced
  • 1/4 cup toasted sesame seeds
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon lime juice

Instructions

  1. Spread the day-old rice on a baking sheet. Bake at 350°F (175°C) for 15-20 minutes, stirring halfway, until the rice grains are dry and slightly toasted. Alternatively, toast the rice in a dry skillet over medium heat until crispy.
  2. Heat the neutral oil in a large skillet over medium-high heat. Add the dried rice and cook, stirring occasionally, until the rice is golden brown and crispy, about 5-7 minutes. Remove from heat and let cool slightly.
  3. In a small bowl, whisk together the grated ginger, rice vinegar, soy sauce, sesame oil, honey, and lime juice to make the dressing.
  4. In a large bowl, combine the cooled crispy rice, edamame, cilantro, mint, and green onions.
  5. Pour the dressing over the rice mixture. Toss gently to coat all ingredients.
  6. Stir in the toasted sesame seeds just before serving or packing for later.

Notes

  • Using day-old, refrigerated rice yields the best crispiness when toasting.
  • For added protein, include 1 cup of shredded cooked chicken or crumbled tofu.
  • To maintain maximum crunch, store the dressing separately and add it just before eating.
