Ingredients
Scale
12 large eggs
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon white vinegar
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup finely chopped celery
1/4 cup finely chopped green bell pepper
1/4 cup finely chopped red onion
Black olives, sliced (for eyes)
Pimento-stuffed green olives, halved (for legs)
Optional: Paprika for dusting
Instructions
Place eggs in a large saucepan and cover with cold water by 1 inch. Bring to a boil over high heat. Once boiling, remove from heat, cover, and let stand for 10-12 minutes.
Drain eggs and immediately transfer to an ice bath to cool completely.
Peel cooled eggs and slice them in half lengthwise.
Scoop the yolks into a medium bowl. Arrange the egg whites on a serving platter.
Mash the yolks with a fork. Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper. Mix until smooth and creamy.
Stir in chopped celery, green bell pepper, and red onion.
Spoon the yolk mixture back into the egg white halves.
Decorate each deviled egg to look like a creepy crawly. Use sliced black olives for eyes and halved pimento-stuffed green olives for legs.
If desired, lightly dust with paprika for extra color.
Chill until ready to serve.
Notes
For best results, use eggs that are a few days old. Fresher eggs can be difficult to peel.
Adjust the amount of mayonnaise and mustard to your preference.
Feel free to add other finely chopped vegetables like chives or pickles.
Get creative with your decorations! You can use other small candies or edible decorations to make your crawlies even spookier.
