This is a delightfully creamy and comforting Potato Leek Soup, perfect for a chilly evening. Jacob makes this recipe with an intuitive touch that results in a velvety smooth texture everyone loves. It is simple to prepare and highly satisfying.

Ingredients

Scale
  • 3 tablespoons unsalted butter
  • 4 large leeks, white and light green parts only, cleaned and sliced
  • 2 pounds Russet potatoes, peeled and roughly chopped
  • 6 cups chicken or vegetable broth
  • 1 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • Optional Garnish: Crispy bacon bits or fresh chives

Instructions

  1. Melt the butter in a large pot or Dutch oven over medium heat.
  2. Add the sliced leeks to the pot. Sauté gently until they are soft and translucent, about 8 to 10 minutes. Do not let them brown.
  3. Add the chopped potatoes and the broth to the pot. Bring the mixture to a boil, then reduce the heat to a simmer.
  4. Cook until the potatoes are very tender when pierced with a fork, about 15 to 20 minutes.
  5. Remove the pot from the heat. Using an immersion blender, carefully blend the soup until completely smooth and creamy. Alternatively, transfer the soup in batches to a standard blender (venting the lid) and blend until smooth before returning it to the pot.
  6. Stir in the heavy cream, salt, and pepper. Heat gently over low heat until warmed through; do not boil after adding the cream.
  7. Taste the soup and adjust seasoning with more salt and pepper as needed.
  8. Ladle the soup into bowls and top with your desired garnish, like bacon or chives.

Notes

  • Cleaning leeks thoroughly is important; slice them first, then wash them well in a bowl of water to remove grit.
  • For an extra rich flavor, Jacob sometimes sautés a clove of minced garlic with the leeks for the last minute.
  • If the soup is too thick after blending, add a splash more broth or milk until you reach your preferred consistency.
