Make a rich, creamy, and comforting classic rice pudding on the stovetop using simple ingredients. This recipe delivers a nostalgic dessert perfect for a warm treat.

Ingredients

Scale
  • 1 cup short-grain white rice
  • 4 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus extra for topping)

Instructions

  1. Rinse the rice under cold water until the water runs mostly clear.
  2. Combine the rinsed rice, whole milk, sugar, and salt in a medium, heavy-bottomed saucepan.
  3. Place the saucepan over medium heat. Stir frequently until the mixture just begins to simmer.
  4. Reduce the heat to low. Continue to cook, stirring often (every 3 to 5 minutes), for 40 to 50 minutes, or until the rice is tender and the pudding has thickened to your desired consistency. Do not allow it to boil rapidly.
  5. Remove the saucepan from the heat. Stir in the vanilla extract.
  6. If the pudding seems too thick, stir in a splash of extra milk until it reaches your preferred creaminess.
  7. Serve warm, sprinkled with extra ground cinnamon.

Notes

  • For a richer flavor, use half-and-half instead of some of the milk.
  • This pudding thickens considerably as it cools. Adjust the final consistency with milk if you plan to eat it cold later.
  • You can substitute brown sugar for granulated sugar for a deeper molasses flavor.
