Make this comforting Chicken and Dumplings recipe quickly on a busy weeknight. This recipe combines tender chicken in a savory broth topped with fluffy, easy-to-make dumplings. It is a perfect, satisfying homemade meal.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 medium onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup all-purpose flour (for dumplings)
  • 1 teaspoon baking powder (for dumplings)
  • 1/2 teaspoon salt (for dumplings)
  • 1/2 cup milk (for dumplings)
  • 2 tablespoons cold butter, cut into small pieces (for dumplings)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until lightly browned, about 5 minutes.
  3. Add onion, carrots, and celery. Cook until vegetables begin to soften, about 5 minutes.
  4. Pour in chicken broth. Stir in thyme, salt, and pepper. Bring the mixture to a simmer.
  5. While the broth simmers, prepare the dumplings. In a small bowl, whisk together flour, baking powder, and salt for the dumplings.
  6. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  7. Stir in the milk until just combined to form a shaggy dough. Do not overmix.
  8. Drop the dumpling dough by spoonfuls onto the simmering chicken mixture. Do not crowd the pot.
  9. Cover the pot, reduce heat to low, and simmer for 15 minutes without lifting the lid. This allows the dumplings to steam and cook through.
  10. Remove the lid. The dumplings should be puffed and cooked. Serve immediately.

Notes

  • For faster cooking, use pre-shredded cooked rotisserie chicken instead of raw chicken breasts. Add it during step 4.
  • If you prefer thicker dumplings, increase the flour slightly, but be careful not to make the dough too stiff.
  • Taste the broth before serving and adjust salt and pepper if needed.
