Ingredients
Scale
1 cup cottage cheese
6 large eggs
1/4 cup milk (any kind)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup shredded cheese (Monterey Jack or cheddar works well)
1/2 cup cooked, chopped fillings (like spinach, bacon bits, or ham)
Instructions
Preheat your oven to 350 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or use silicone liners.
In a blender or food processor, combine the cottage cheese, eggs, milk, salt, and pepper. Blend until the mixture is completely smooth. This step is key for a creamy texture similar to Starbucks egg bites.
Stir in the shredded cheese and your chosen cooked fillings into the egg mixture.
Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
Bake for 18 to 22 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
Let the egg cups cool in the tin for 5 minutes before carefully removing them.
Store your meal prep egg cups in an airtight container in the refrigerator for up to four days. Reheat in the microwave for 30 to 45 seconds.
Notes
For a smoother texture, you can use an immersion blender directly in a large measuring cup instead of a full blender.
If you prefer a sous-vide style texture, you can bake these in a water bath (bain-marie) for more even cooking, though standard baking works great for a quick crustless quiche cups hack.
Feel free to swap fillings; cooked mushrooms or diced bell peppers are great additions to these protein egg cups.
