Make simple, protein-rich egg cups at home using cottage cheese for a texture similar to Starbucks egg bites. Bake or use an oven method.

Ingredients

Scale
  • 1 cup cottage cheese
  • 6 large eggs
  • 1/4 cup shredded cheese (cheddar or Monterey Jack)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 cup mix-ins (e.g., chopped spinach, cooked bacon bits)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a standard 12-cup muffin tin.
  2. In a blender or food processor, combine the cottage cheese and eggs until smooth. This creates the creamy base.
  3. Stir in the shredded cheese, salt, and pepper into the egg mixture.
  4. If using, gently fold in your chosen mix-ins.
  5. Pour the mixture evenly into the prepared muffin cups, filling each about three-quarters full.
  6. Bake for 18 to 22 minutes, or until the centers are set and a toothpick inserted comes out clean.
  7. Let the cups cool in the tin for 5 minutes before carefully removing them.

Notes

  • For a smoother texture closer to sous-vide, blend the cottage cheese and eggs very thoroughly.
  • These cups store well in an airtight container in the refrigerator for up to four days for meal prep.
  • Reheat in the microwave for 30 to 45 seconds.
