Ingredients
Scale
6 cups fresh peaches, sliced
1/2 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1 cup all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup cold unsalted butter, cut into pieces
1/2 cup milk
1 tablespoon unsalted butter, melted
1 tablespoon granulated sugar
Instructions
Preheat your oven to 375°F (190°C).
In a large bowl, combine the sliced peaches, 1/2 cup sugar, cornstarch, cinnamon, nutmeg, and lemon juice. Toss gently to coat the peaches.
Pour the peach mixture into an 8×8 inch baking dish.
In a separate bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt.
Cut in the cold butter pieces using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Pour in the milk and stir until just combined. Do not overmix.
Drop spoonfuls of the cobbler topping over the peach mixture.
Brush the tops of the cobbler with melted butter and sprinkle with the remaining 1 tablespoon of sugar.
Bake for 35-45 minutes, or until the topping is golden brown and the peach filling is bubbly.
Let it cool slightly before serving.
Notes
For an extra burst of flavor, you can add a pinch of cardamom to the peach mixture.
Serve warm with vanilla ice cream or whipped cream for a classic treat.
If fresh peaches are not in season, frozen or canned peaches (drained) can be used. Adjust sugar as needed based on the sweetness of the peaches.
