Achieve perfectly light, crisp, and airy meringue cookies with this classic recipe. These delicate treats are naturally gluten-free and sweet, ideal for elegant dessert tables or festive holiday decorating.

Ingredients

Scale
  • 4 large egg whites, room temperature
  • 1 cup superfine granulated sugar (caster sugar)
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to a low temperature, around 200°F (95°C). Line baking sheets with parchment paper.
  2. Make sure your mixing bowl and whisk attachment are completely clean and dry. Add the egg whites and cream of tartar to the bowl.
  3. Beat the egg whites on medium speed until soft peaks form. This takes about 3 to 5 minutes.
  4. Gradually add the superfine sugar, about 1 tablespoon at a time, while beating continuously on medium-high speed. Wait about 30 seconds between additions.
  5. Continue beating until the meringue is very stiff, glossy, and holds stiff peaks. When you rub a small amount between your fingers, it should feel smooth, not gritty.
  6. Beat in the vanilla extract gently.
  7. Transfer the meringue to a piping bag fitted with your desired tip (a star tip creates beautiful definition).
  8. Pipe small mounds or desired shapes onto the prepared baking sheets. Keep cookies about 1 inch apart.
  9. Place the baking sheets in the preheated oven. Bake for 1.5 to 2 hours, depending on size, until the meringues are dry to the touch and lift easily from the paper.
  10. Turn off the oven, prop the door open slightly, and let the cookies cool completely inside the oven for at least 1 hour, or preferably overnight, to prevent cracking and weeping.

Notes

  • Ensure all equipment is grease-free; any fat will prevent the egg whites from whipping properly.
  • Use room temperature egg whites for maximum volume.
  • If your cookies weep (develop beads of syrup), your oven temperature was likely too high, or you did not bake them long enough to fully dry out.
  • For colored meringues, add gel food coloring during the final minute of beating.
