Ingredients
Scale
1 (15-ounce) can chickpeas, rinsed and drained
1/4 cup vegan mayonnaise
2 tablespoons finely chopped celery
1 tablespoon finely chopped red onion
1 tablespoon fresh lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon dried dill
1/4 teaspoon black pepper
Pinch of salt
4 slices bread of choice
Optional toppings: lettuce, tomato slices
Instructions
Place the rinsed and drained chickpeas into a medium bowl.
Use a potato masher or a fork to mash the chickpeas until they reach a flaky, tuna-like consistency. Do not over-mash; leave some texture.
Add the vegan mayonnaise, celery, red onion, lemon juice, Dijon mustard, dill, pepper, and salt to the bowl.
Mix all ingredients gently until well combined. Taste and adjust seasonings as needed.
To assemble the sandwich, place your chosen bread slices on a clean surface.
Spoon the chickpea salad mixture evenly onto two slices of bread.
Add any desired toppings like lettuce or tomato.
Top with the remaining slices of bread.
Slice the sandwiches in half and serve immediately.
Notes
For the best texture, make sure your chickpeas are thoroughly dried after rinsing.
You can substitute celery with finely chopped sweet pickle relish for a different flavor profile.
If you prefer a tangier flavor, add a splash more lemon juice.
This salad keeps well in the refrigerator for up to three days in an airtight container.
