Ingredients
Scale
10 ounces dried egg noodles
1 pound boneless, skinless chicken breast, cut into bite-sized pieces
1 tablespoon soy sauce (for marinating chicken)
1 teaspoon cornstarch (for marinating chicken)
2 tablespoons vegetable oil, divided
1 cup shredded cabbage
1 cup shredded carrots
1 cup sliced mushrooms
1/2 cup sliced onion
2 cloves garlic, minced
1/4 cup low sodium soy sauce (for sauce)
2 tablespoons oyster sauce (for sauce)
1 tablespoon brown sugar (for sauce)
1 teaspoon sesame oil (for sauce)
1/2 teaspoon ground ginger (for sauce)
1/4 cup chicken broth (for sauce)
2 green onions, sliced (for garnish)
Instructions
Cook the egg noodles according to package directions until tender. Drain them well and set aside.
In a bowl, toss the cut chicken pieces with 1 tablespoon of soy sauce and 1 teaspoon of cornstarch. Let this marinate while you prepare the vegetables.
Whisk together all the sauce ingredients: 1/4 cup soy sauce, oyster sauce, brown sugar, sesame oil, ground ginger, and chicken broth. Set the savory asian noodles recipe sauce aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and stir fry until it is cooked through and lightly browned, about 5 to 7 minutes. Remove the chicken from the skillet and set it aside.
Add the remaining 1 tablespoon of oil to the skillet. Add the onion, carrots, cabbage, mushrooms, and garlic. Stir fry the vegetables until they are crisp-tender, about 4 minutes.
Return the cooked chicken to the skillet with the vegetables. Add the cooked noodles to the skillet.
Pour the prepared chow mein sauce over the noodles, chicken, and vegetables. Toss everything together constantly until the noodles are evenly coated and the sauce has thickened slightly, about 2 to 3 minutes.
Remove the stir fry chicken noodles from the heat. Serve immediately, garnished with sliced green onions. You have made a fantastic weeknight chicken dinner.
Notes
For the best texture, make sure your noodles are fully drained before adding them to the wok.
If you prefer a slightly crispier vegetable texture, reduce the cooking time for the vegetables slightly.
This recipe is a great healthy chow mein alternative to delivery options.
