Ingredients
Scale
2 cups cooked white rice (about 1 cup uncooked)
2 cups cooked, shredded chicken breast (use rotisserie chicken for speed)
2 cups fresh or frozen broccoli florets, lightly steamed or blanched
1 (10.5 ounce) can condensed cream of chicken soup
1 (10.5 ounce) can condensed cream of mushroom soup
1 cup sour cream
1/2 cup milk
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon salt
2 cups shredded sharp cheddar cheese, divided
1/2 cup panko breadcrumbs (optional, for topping)
2 tablespoons melted butter (if using breadcrumbs)
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
In a large bowl, combine the cooked rice, cooked chicken, and prepared broccoli florets.
In a separate medium bowl, whisk together the cream of chicken soup, cream of mushroom soup, sour cream, milk, onion powder, garlic powder, pepper, and salt until smooth. This creates your creamy base.
Pour the creamy soup mixture over the chicken, rice, and broccoli mixture. Stir gently until everything is evenly coated.
Stir in 1 1/2 cups of the shredded cheddar cheese into the casserole mixture.
Spread the entire mixture evenly into your prepared baking dish.
In a small bowl, toss the remaining 1/2 cup of cheddar cheese with the panko breadcrumbs, if using. Sprinkle this topping evenly over the casserole. If you skip the breadcrumbs, just sprinkle the remaining cheese on top.
If using breadcrumbs, drizzle the 2 tablespoons of melted butter over the topping.
Bake for 25 to 30 minutes, or until the casserole is hot throughout and the cheese topping is melted and lightly golden brown.
Let the casserole rest for 5 minutes before you serve it. This helps the creamy sauce set up slightly.
Notes
For a make-ahead option, assemble the entire casserole (do not bake) and cover it tightly with foil. Refrigerate for up to 2 days. When ready to bake, add 10-15 minutes to the baking time to account for the cold temperature.
If you want a healthier version, substitute the condensed soups with plain Greek yogurt mixed with a little chicken broth and cornstarch for thickening.
Use pre-cooked rice to save significant time on a busy weeknight.
