Ingredients
Scale
1 pound ground beef (80/20 recommended)
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 cup dill pickle chips, chopped
1/4 cup finely chopped white onion
1/2 cup shredded lettuce (iceberg or romaine)
1/4 cup shredded cheddar cheese
1 tablespoon olive oil
For the Sauce:
1/4 cup mayonnaise
1 tablespoon yellow mustard
1 tablespoon ketchup (use sugar-free if strictly keto)
1 teaspoon pickle juice
1/2 teaspoon smoked paprika
Instructions
In a medium bowl, combine the ground beef, salt, pepper, and garlic powder. Mix gently with your hands until just combined. Do not overmix.
Heat the olive oil in a large skillet over medium-high heat. Add the seasoned ground beef and cook, breaking it apart with a spoon, until fully browned, about 6 to 8 minutes. Drain off any excess grease.
While the beef cooks, prepare the sauce. Whisk together the mayonnaise, mustard, ketchup, pickle juice, and smoked paprika in a small bowl until smooth.
To assemble the bowls for immediate serving, divide the cooked beef among two bowls. Top each portion with shredded lettuce, chopped pickles, chopped onion, and shredded cheddar cheese.
Drizzle a generous amount of the tangy burger sauce over the top of each bowl.
For meal prep, place the cooked beef, lettuce, pickles, and onion into separate airtight containers. Keep the sauce and cheese separate until ready to eat. Reheat the beef, then add the cold toppings and sauce before serving.
Notes
You can substitute ground turkey or ground chicken for the beef if you prefer. Adjust cooking time slightly if using leaner meat.
For a keto base, use shredded lettuce. For a non-keto option, use 1/2 cup cooked white rice or cauliflower rice per bowl.
Make a double batch of the sauce and store it in the refrigerator for up to one week.
