Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 cup broccoli florets
  • 1 red bell pepper, thinly sliced
  • 1 cup sliced mushrooms
  • 1/2 cup snow peas
  • 2 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon honey
  • 1 teaspoon sesame oil
  • 4 cups cauliflower rice
  • Optional garnishes: sesame seeds, chopped green onions

Instructions

  1. Heat olive oil in a large skillet or wok over medium-high heat.
  2. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add broccoli, red bell pepper, mushrooms, and snow peas to the skillet. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
  4. Add garlic and ginger to the skillet and cook for 1 minute more, until fragrant.
  5. In a small bowl, whisk together soy sauce, honey, and sesame oil.
  6. Add cauliflower rice and the soy sauce mixture to the skillet. Stir to combine and cook for 5-7 minutes, until cauliflower rice is heated through and tender.
  7. Return the cooked chicken to the skillet and stir to combine.
  8. Serve immediately, garnished with sesame seeds and green onions if desired.

Notes

  • For a vegetarian option, substitute tofu or extra vegetables for chicken.
  • Adjust soy sauce and honey to your taste.
  • Ensure your cauliflower rice is dry before adding to the skillet for best results.
