Ingredients
Scale
1 head cauliflower, cut into bite-sized florets
1 cup all-purpose flour
1 cup panko breadcrumbs
2 large eggs, beaten
1/2 cup hot sauce
1/4 cup unsalted butter, melted
1 tablespoon white vinegar
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Salt and black pepper to taste
Optional: Ranch dressing or blue cheese dressing for serving
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a medium bowl, toss the cauliflower florets with the beaten eggs until evenly coated.
In a separate shallow dish, combine the flour, panko breadcrumbs, garlic powder, cayenne pepper, salt, and black pepper.
Dredge the egg-coated cauliflower florets in the flour mixture, ensuring they are well coated.
Place the coated cauliflower on the prepared baking sheet in a single layer.
Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
While the cauliflower is baking, prepare the buffalo sauce. In a small saucepan, melt the butter. Stir in the hot sauce, white vinegar, and a pinch of salt and pepper. Heat gently until combined.
Once the cauliflower is baked and crispy, transfer it to a large bowl. Pour the buffalo sauce over the cauliflower and toss gently to coat evenly.
Return the sauced cauliflower to the baking sheet and bake for another 5 minutes to allow the sauce to set.
Serve hot with your favorite dipping sauce.
Notes
For extra crispy bites, you can double-coat the cauliflower.
Adjust the amount of hot sauce and cayenne pepper to control the spice level.
Feel free to add a touch of honey or maple syrup to the buffalo sauce for a hint of sweetness.
