Make your busy mornings simpler with these easy, high-protein breakfast cookies. They combine oats, banana, and peanut butter for a wholesome, grab-and-go meal prep solution.

Ingredients

Scale
  • 2 cups rolled oats
  • 1 cup natural peanut butter
  • 2 ripe bananas, mashed
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1/4 cup ground flaxseed
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup low-sugar chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the mashed bananas and peanut butter. Mix until smooth.
  3. Add the rolled oats, protein powder, flaxseed, baking soda, and cinnamon to the wet ingredients. Stir everything together until a thick dough forms.
  4. Fold in the chocolate chips, if you are using them.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet, flattening them slightly with the back of the spoon to form cookie shapes.
  6. Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
  7. Let the breakfast cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. Store your finished cookies in an airtight container for quick breakfast access throughout the week.
