Enjoy these delightful Black Raspberry Crumble Bars, a perfect way to savor the sweet and tart flavor of black raspberries. This recipe combines a buttery shortbread base with a juicy black raspberry filling and a crunchy oat crumble topping.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 2 cups fresh or frozen black raspberries
  • 1/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium bowl, combine the flour, rolled oats, brown sugar, and salt. Pour in the melted butter and stir until the mixture is crumbly.
  3. Press two-thirds of the crumble mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the black raspberries with granulated sugar, cornstarch, and lemon juice.
  5. Spread the black raspberry mixture evenly over the crust.
  6. Sprinkle the remaining crumble mixture over the top of the raspberry layer.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the bars cool completely in the pan on a wire rack before cutting into squares.

Notes

  • For a firmer filling, you can add an extra teaspoon of cornstarch.
  • If using frozen black raspberries, do not thaw them before mixing with sugar and cornstarch.
  • These bars are delicious served on their own or with a scoop of vanilla ice cream.
