Ingredients
All-purpose flour
Baking soda
Salt
Unsalted butter, softened
Granulated sugar
Brown sugar, packed
Egg
Vanilla extract
Caramels, unwrapped (or soft caramel sauce)
Heavy cream (if using caramels)
Milk chocolate chips
Shortening (optional, for melting chocolate)
Instructions
Prepare the cookie dough: Whisk together flour, baking soda, and salt.
Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Chill the dough for at least 30 minutes.
Prepare the caramel: If using caramels, melt them gently with a splash of heavy cream until smooth. Set aside to cool slightly.
Shape the cookies: Scoop dough balls onto a prepared baking sheet. Press a slight indentation into the center of each dough ball.
Fill the indentations with a small amount of the prepared caramel.
Bake the cookies at 350°F (175°C) for 9-11 minutes, or until the edges are set.
Let the cookies cool completely on the baking sheet before handling.
Melt the milk chocolate chips, adding shortening if needed for a smoother consistency.
Drizzle or dip the cooled cookies in the melted chocolate. Let the chocolate set completely before serving.
Notes
Ensure your butter is truly softened, not melted, for the best cookie texture.
You can save time by using high-quality, soft store-bought caramel sauce instead of making your own.
Cooling the chocolate completely helps prevent the caramel from oozing out when you handle the finished cookie.
This recipe works well for gifting when stored in an airtight container.
