This is the best homemade egg salad recipe for a creamy, flavorful filling perfect for quick lunches and simple picnic side dishes. You can use this easy egg salad sandwich filling for meal prep or serve it immediately.

Ingredients

Scale
  • 12 large eggs, hard-boiled and peeled
  • 1/2 cup mayonnaise (use full-fat for best texture)
  • 2 tablespoons Dijon mustard
  • 1/4 cup finely chopped celery
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh chives, snipped
  • 1 teaspoon white vinegar or lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the peeled, hard-boiled eggs in a large bowl. Use a fork or potato masher to coarsely chop the eggs. You want some texture, so avoid making it completely smooth.
  2. In a separate small bowl, whisk together the mayonnaise, Dijon mustard, white vinegar or lemon juice, salt, and pepper until smooth. This creates your creamy dressing for egg salad.
  3. Add the chopped celery, fresh dill, and chives to the chopped eggs.
  4. Pour the dressing over the egg and vegetable mixture. Gently fold everything together until it is just combined. Do not overmix, or the salad will become mushy.
  5. Taste the mixture and adjust salt and pepper as needed.
  6. For the best flavor, cover the bowl and chill the egg salad for at least 30 minutes before serving. This allows the flavors to meld.
  7. Serve your perfect egg salad on toasted bread for an easy egg salad sandwich, or use it in lettuce wraps.

Notes

  • For the creamiest dressing, ensure your mayonnaise is at room temperature before mixing.
  • If you prefer a tangier flavor, add a teaspoon of sweet pickle relish to the mix.
  • This recipe is excellent for egg salad for meal prep; it keeps well in the refrigerator for up to four days.
