This is the ultimate warm, cheesy, and bubbly Mexican Street Corn Dip, inspired by authentic Elote. It brings the tangy, slightly spicy flavors of street corn to your table in an easy-to-make appetizer perfect for any party.

Ingredients

Scale
  • 8 ounces cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded Monterey Jack cheese, plus extra for topping
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked, drained corn kernels (canned, frozen, or roasted)
  • 1/2 cup finely chopped fresh cilantro
  • 1/4 cup finely chopped red onion
  • 1-2 jalapeños, seeded and minced (adjust to your spice preference)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 cup cotija cheese, crumbled
  • Juice of 1 lime
  • Salt and black pepper to taste
  • Optional topping: extra cotija cheese and a drizzle of hot sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a medium oven-safe skillet or baking dish.
  2. In a large bowl, combine the softened cream cheese, mayonnaise, and sour cream. Mix until smooth.
  3. Stir in the shredded Monterey Jack, cheddar cheese, corn, cilantro, red onion, minced jalapeños, chili powder, cumin, and smoked paprika.
  4. Mix in the crumbled cotija cheese and the fresh lime juice. Season with salt and pepper.
  5. Spread the mixture evenly into your prepared baking dish.
  6. Top with an extra layer of Monterey Jack cheese.
  7. Bake for 20 to 25 minutes, or until the dip is hot, bubbly, and the cheese topping is melted and lightly golden.
  8. Let the dip cool for 5 minutes before serving hot with tortilla chips or fresh vegetables.

Notes

  • For a slow cooker option, mix all ingredients and cook on low for 2 hours or high for 1 hour, stirring halfway through. Top with extra cheese for the last 15 minutes of cooking.
  • Roasting the corn before mixing adds a deeper flavor.
  • If you prefer a tangier dip, increase the lime juice slightly.
  • Jacob suggests using a cast-iron skillet for the best heat retention and presentation.
