Ingredients

Scale
  • 1 loaf (about 1 pound) brioche or challah bread, cut into 1-inch cubes
  • 4 large bananas, sliced
  • 1 cup milk (whole or 2%)
  • 1/2 cup heavy cream
  • 4 large eggs
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • For Topping (optional): Powdered sugar, maple syrup

Instructions

  1. Lightly grease a 9×13 inch baking dish.
  2. Arrange half of the bread cubes evenly in the prepared dish.
  3. Scatter all the sliced bananas over the layer of bread.
  4. Top with the remaining bread cubes.
  5. In a large bowl, whisk together the milk, heavy cream, eggs, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.
  6. Pour the egg mixture evenly over the bread and bananas in the baking dish. Gently press down on the bread to help it soak up the liquid.
  7. Cover the dish tightly with plastic wrap.
  8. Refrigerate for at least 8 hours, or overnight.
  9. The next morning, preheat your oven to 375 degrees F (190 degrees C).
  10. Remove the plastic wrap from the dish. If using nuts, sprinkle them over the top.
  11. Bake for 40 to 45 minutes, or until the top is golden brown and the center is set. A knife inserted near the center should come out mostly clean.
  12. Let it cool for 5-10 minutes before serving.
  13. Serve warm with powdered sugar and maple syrup, if desired.

Notes

  • Using day-old bread works best for soaking up the custard.
  • You can substitute almond milk for dairy milk if you prefer.
  • For extra banana flavor, mash one ripe banana into the custard mixture.
