Ingredients

Scale
  • 3 medium zucchini
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Non-stick cooking spray
  • For the Dip:
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly spray with non-stick cooking spray.
  2. Wash and trim the ends off the zucchini. Cut the zucchini into fry shapes, about 1/4 inch thick.
  3. Set up your breading station with three shallow dishes. In the first, place the flour. In the second, whisk the egg. In the third, mix the panko breadcrumbs, Parmesan cheese, salt, and pepper.
  4. Dip each zucchini fry first into the flour, shaking off any excess.
  5. Next, dip the floured fry into the egg mixture, letting any extra drip off.
  6. Finally, press the fry firmly into the breadcrumb mixture, coating it completely.
  7. Place the coated fries in a single layer on your prepared baking sheet. Do not let them touch.
  8. Lightly spray the tops of the fries with cooking spray for extra crispness.
  9. Bake for 15 to 20 minutes, flipping halfway through, until golden brown and crisp.
  10. While the fries bake, prepare the dip. Mix the Greek yogurt, lemon juice, minced garlic, and chopped dill in a small bowl.
  11. Serve the hot baked zucchini fries immediately with the tangy yogurt dip.

Notes

  • For the crispiest results, pat the zucchini pieces dry with a paper towel before you start breading them.
  • If you wish to make this recipe dairy-free, substitute the Parmesan cheese with nutritional yeast and use a dairy-free yogurt for the dip.
  • Jacob suggests adding a pinch of smoked paprika to the breadcrumb mixture for extra depth of flavor.
