Bake bananas stuffed with churro flavors for a simple, warm, and delightful dessert. This recipe combines the ease of baking with the sweet spice of churros.

Ingredients

Scale
  • 4 medium bananas, unpeeled
  • 1/4 cup unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • 1/4 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon vanilla extract
  • Optional: Chocolate chips or dulce de leche for filling

Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper.
  2. Slice each banana lengthwise down one side, leaving the peel intact to create a boat shape. Do not cut all the way through.
  3. In a small bowl, mix the melted butter, brown sugar, cinnamon, nutmeg, and salt until combined.
  4. Brush the butter mixture generously over the exposed banana flesh inside each banana boat.
  5. In a separate small bowl, combine the flour and granulated sugar. This is your simple churro topping.
  6. Sprinkle the flour and sugar mixture evenly over the buttered banana flesh.
  7. If using, gently tuck a few chocolate chips or a small spoonful of dulce de leche into the opening alongside the banana flesh.
  8. Place the filled bananas on the prepared baking sheet.
  9. Bake for 12 to 15 minutes, or until the bananas are soft and the topping is golden brown and slightly crisp.
  10. Carefully remove from the oven. Serve immediately while warm. You can eat them directly from the peel or scoop the warm mixture out.

Notes

  • Use firm but ripe bananas for the best texture after baking.
  • For an extra churro crunch, you can lightly toast the flour and sugar mixture in a dry pan for two minutes before mixing with the butter, but this is optional.
  • This dessert pairs wonderfully with a scoop of vanilla ice cream.
  • Jacob suggests tasting the spiced butter mix before brushing to adjust cinnamon to your liking.
