Ingredients
Scale
1 large head cauliflower, cut into bite-sized florets
2 tablespoons olive oil
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup milk (any kind)
1/2 cup Buffalo hot sauce
2 tablespoons melted butter (optional, for extra richness)
Instructions
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, salt, and pepper.
In a separate bowl, briefly dip each cauliflower floret into the milk, letting excess drip off.
Dredge the coated floret in the flour mixture, shaking off any excess.
Place the dredged florets on the prepared baking sheet in a single layer. Do not overcrowd the pan.
Bake for 20-25 minutes, flipping halfway through, until golden brown and tender-crisp.
While the cauliflower bakes, whisk together the Buffalo hot sauce and melted butter (if using) in a small bowl.
Remove the baked cauliflower from the oven. Immediately transfer the hot florets to a large bowl.
Pour the Buffalo sauce mixture over the cauliflower and gently toss until every piece is evenly coated.
Return the sauced bites to the baking sheet and bake for an additional 5-7 minutes to set the sauce.
Serve immediately with your favorite dipping sauce.
Notes
For extra crispiness, consider tossing the floured florets with a small amount of cooking spray before the first bake.
If you prefer a spicier kick, add a dash of cayenne pepper to your flour mixture.
