This creamy avocado chicken salad is a high-protein, no-mayo lunch option packed with healthy fats. It is quick to make and perfect for meal prepping your week’s healthy lunches.

Ingredients

Scale
  • 2 cups cooked, shredded chicken breast
  • 2 ripe avocados, mashed
  • 1/4 cup plain Greek yogurt (optional, for extra tang and protein)
  • 1/4 cup finely chopped celery
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro or parsley (optional)

Instructions

  1. Place the shredded chicken in a medium mixing bowl.
  2. In a separate small bowl, combine the mashed avocado, Greek yogurt (if using), lime juice, and Dijon mustard. Mix until smooth.
  3. Add the avocado mixture to the bowl with the chicken.
  4. Fold in the chopped celery, red onion, salt, and pepper. Mix gently until everything is just combined. Do not overmix.
  5. Stir in the fresh cilantro or parsley, if you are using it.
  6. Taste the salad and adjust seasoning as needed.
  7. Serve immediately over lettuce wraps, on low carb bread, or store for meal prep.

Notes

  • To keep this salad keto friendly, serve it in large lettuce cups instead of on toast or crackers.
  • If you are preparing this ahead of time, add the lime juice to help prevent the avocado from browning quickly.
  • For an extra layer of flavor, add 1/4 teaspoon of garlic powder or a dash of hot sauce to the mixture.
