Ingredients
Scale
2 sheets frozen puff pastry, thawed
4 medium Granny Smith apples, peeled, cored, and thinly sliced
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
1/4 cup raisins (optional)
1 large egg, beaten (for egg wash)
1/4 cup powdered sugar (for glaze)
2 tablespoons pure maple syrup (for glaze)
1 teaspoon milk or water (for glaze)
Instructions
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
In a large bowl, combine the sliced apples, granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and raisins if you are using them. Mix gently until the apples are evenly coated.
Unfold one sheet of thawed puff pastry onto a lightly floured surface. Roll it slightly to make it a bit larger, aiming for a rectangle approximately 10×12 inches.
Spoon half of the apple mixture along the long edge of the pastry, leaving a 1-inch border on the sides and a 2-inch border at the far edge.
Fold the short sides inward over the filling. Then, starting from the long edge closest to you, tightly roll the pastry over the filling to form a log. Pinch the seam closed and tuck the ends under.
Carefully transfer the first strudel log to one prepared baking sheet. Repeat the process with the second sheet of pastry and the remaining filling.
Brush the tops of both strudels evenly with the beaten egg wash. Cut three or four small slits in the top of each log to allow steam to escape.
Bake for 25 to 30 minutes, or until the pastry is golden brown and puffed.
While the strudel bakes, prepare the glaze: Whisk together the powdered sugar, maple syrup, and milk or water until smooth.
Remove the strudels from the oven and let them cool on the baking sheet for 10 minutes. Drizzle the warm glaze over the tops. Slice and serve warm.
Notes
Serve this strudel warm with a scoop of vanilla ice cream or a dusting of extra powdered sugar.
If you prefer a crunchier texture, sprinkle 1/4 cup of chopped pecans or walnuts over the apple filling before rolling.
You can substitute apples with pears or a mix of both for a different flavor profile.
