Bake muffins that capture the warm spice and apple texture of a classic fritter, finished with a simple powdered sugar glaze.

Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 1/2 cups peeled and finely chopped apples (such as Granny Smith or Honeycrisp)
  • 1/4 cup powdered sugar (for glaze)
  • 1 tablespoon milk or water (for glaze)
  • 1/4 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a 12-cup muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
  4. Alternate adding the dry ingredient mixture and the milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  5. Gently fold in the chopped apples. The batter will be thick.
  6. Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  9. While the muffins cool, prepare the glaze: Whisk together the powdered sugar, 1 tablespoon of milk or water, and 1/4 teaspoon of vanilla extract until smooth. Add more liquid, a drop at a time, if the glaze is too thick.
  10. Once the muffins are completely cool, drizzle the glaze over the tops. Allow the glaze to set before serving.

Notes

  • For a texture closer to a fritter, use slightly less milk in the batter.
  • You can toss the chopped apples with 1 teaspoon of the cinnamon before folding them into the batter for stronger flavor.
  • Make the glaze thicker if you prefer a heavy coating, or thinner for a light drizzle.
