Ingredients
Scale
4 medium bell peppers (any color)
1 tablespoon olive oil
1 small onion, finely chopped
1 pound ground beef or ground turkey
1 cup cooked rice
1 (15 ounce) can tomato sauce, divided
1 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste
1/4 cup shredded mozzarella cheese (optional)
Instructions
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly brush the inside of the peppers with a little olive oil.
Heat the remaining olive oil in a skillet over medium heat. Add the chopped onion and cook until soft, about 3 minutes.
Add the ground meat to the skillet. Cook, breaking it up, until browned. Drain off any excess fat.
Stir in the cooked rice, half of the tomato sauce (about 1/2 cup), oregano, basil, salt, and pepper. Mix well.
Spoon the meat and rice mixture evenly into the bell pepper halves.
Place the stuffed peppers in the air fryer basket in a single layer. You may need to cook in batches.
Drizzle the tops of the peppers with the remaining tomato sauce.
Air fry at 375°F (190°C) for 15 to 20 minutes, or until the peppers are tender.
If using cheese, sprinkle mozzarella over the tops during the last 2 minutes of cooking.
Carefully remove from the air fryer and serve immediately.
Notes
Use brown rice for added fiber.
You can substitute ground turkey for ground beef for a lighter option.
If your peppers are very large, you might need to increase the cooking time slightly.
This recipe works well for meal prepping; simply reheat in the air fryer.
