Make crispy sweet potato filling for tacos using your air fryer. This recipe includes a simple lime-cilantro crema.

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and diced into 1/2 inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 small corn or flour tortillas
  • 1 cup black beans, rinsed and drained
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro (for salsa)
  • 1 lime, juiced (for salsa)
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 tablespoon fresh lime juice (for crema)
  • 1 tablespoon chopped fresh cilantro (for crema)

Instructions

  1. Place the diced sweet potatoes in a bowl. Toss them with olive oil, chili powder, cumin, salt, and pepper until evenly coated.
  2. Preheat your air fryer to 400 degrees Fahrenheit (200 degrees Celsius).
  3. Arrange the seasoned sweet potatoes in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary.
  4. Air fry for 12 to 15 minutes, shaking the basket halfway through, until the potatoes are tender and crispy on the edges.
  5. While the potatoes cook, prepare the salsa by mixing the black beans, red onion, 1/4 cup cilantro, and 1 lime juice in a small bowl. Set aside.
  6. Prepare the crema by whisking together the sour cream (or yogurt), 1 tablespoon lime juice, and 1 tablespoon cilantro.
  7. Warm the tortillas according to package directions, either in a dry skillet or briefly in the microwave.
  8. Assemble the tacos: Fill each warm tortilla with a portion of the crispy sweet potatoes, top with the black bean salsa, and drizzle with the lime-cilantro crema.

Notes

  • For extra crispiness, toss the sweet potatoes with 1 teaspoon of cornstarch before adding the oil and spices.
  • If you prefer a softer potato, reduce the air fryer temperature to 380 degrees Fahrenheit and cook for 16 minutes.
  • Use shredded cabbage or cotija cheese as alternative toppings.
