Ingredients
Scale
3 medium zucchini
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon black pepper
Cooking spray (oil-based)
Instructions
Wash the zucchini and trim the ends. Cut each zucchini lengthwise into spears, about 1/2 inch thick. Pat the spears very dry with paper towels.
Set up a standard breading station with three shallow dishes.
In the first dish, place the flour. In the second dish, place the beaten eggs.
In the third dish, combine the Panko breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and pepper. Mix well.
Dredge each zucchini spear first in the flour, shaking off excess.
Dip the floured spear into the egg mixture, letting excess drip off.
Coat the spear thoroughly in the Parmesan breadcrumb mixture, pressing gently so the coating adheres.
Lightly spray the bottom of the air fryer basket with cooking spray. Arrange the coated zucchini spears in a single layer, ensuring they do not overlap. Work in batches if necessary.
Spray the tops of the coated spears lightly with cooking spray.
Air fry at 380°F (195°C) for 8 to 10 minutes, flipping halfway through. Cook until the coating is golden brown and crispy.
Serve immediately.
Notes
Drying the zucchini well before breading is key to achieving maximum crispiness.
For an extra crunchy crust, you can chill the breaded spears for 15 minutes before air frying.
Serve with marinara sauce or ranch dressing for dipping.
