Make light, crunchy coconut shrimp using your air fryer. This recipe includes a simple, zesty chili dipping sauce you will love.

Ingredients

Scale
  • 1 lb large shrimp, peeled and deveined
  • 1 large egg, beaten
  • 1/4 cup all-purpose flour
  • 1 cup unsweetened shredded coconut
  • 1/4 cup panko breadcrumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray
  • For the Chili Dip:
  • 1/2 cup sweet chili sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sriracha (optional)

Instructions

  1. Prepare the shrimp by patting them completely dry.
  2. Set up a dredging station with three shallow dishes. Place flour in the first dish.
  3. Place the beaten egg in the second dish.
  4. In the third dish, combine the shredded coconut, panko breadcrumbs, salt, and pepper. Mix well.
  5. Working with one shrimp at a time, dredge it in the flour, shaking off any excess.
  6. Dip the floured shrimp into the egg mixture, letting excess drip off.
  7. Press the shrimp firmly into the coconut mixture until fully coated.
  8. Place the coated shrimp in a single layer in the air fryer basket. Do not overcrowd the basket.
  9. Lightly spray the tops of the shrimp with cooking spray for extra crispness.
  10. Air fry at 380°F (195°C) for 8 to 10 minutes, flipping halfway through, until golden brown and cooked through.
  11. While the shrimp cooks, prepare the dip by whisking together the sweet chili sauce, lime juice, and sriracha (if using) in a small bowl.
  12. Serve the hot air-fried coconut shrimp immediately with the chili dip.

Notes

  • Make sure your shrimp is very dry before breading; this helps the coating stick.
  • You can make the chili dip ahead of time and keep it refrigerated.
  • Adjust the sriracha amount in the dip to control the heat level.
