Ingredients
Scale
1 pound potato gnocchi
1 cup prepared basil pesto
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Bring a large pot of salted water to a boil.
Add the gnocchi and cook according to package directions until they float to the top, usually 2-3 minutes.
Drain the gnocchi well. Reserve about 1/4 cup of the starchy cooking water.
Return the drained gnocchi to the pot over low heat.
Stir in the basil pesto and heavy cream until the gnocchi is coated.
Add the Parmesan cheese and a splash of the reserved cooking water if the sauce seems too thick.
Season with salt and pepper to your preference.
Serve immediately.
Notes
You can substitute heavy cream with half-and-half for a slightly lighter sauce.
Feel free to add a handful of spinach during the last minute of cooking for extra greens.
If you do not have fresh Parmesan, pre-grated works fine.
